Sunday Dinner

Here is what we ate today. Last time I made this was when Neil and I were dating. But it is really good! And really quick and easy!

Italian Spinach Pie (quiche)
Prep time: 10 min
Bake: 40 min (so far for me: 60-70 min)
Makes: 8 servings


1 container (16 oz) Low Fat Cottage Cheese
1 pkg (10 oz) frozen chopped spinach, thawed, well drained
1 c 2% milk shredded reduced fat Mozzarella cheese
4 eggs, beaten
1 jar (7 oz) roasted red peppers, well drained, chopped
1/3 c grated Parmesan cheese
1 tsp dried oregano leaves

PREHEAT oven to 350 degrees F. Mix all ingrediants until well blended.
POUR into greased 9" pie plate (place on cookie sheet - it spills over a little)
BAKE 40 min or until center is set. (+15-30 min?)

served w/ Salad and Potato Rolls. And Cheesecake for dessert.

We had a fun time cooking. Hunter is my little chef buddy. He even has his own apron!
