Lava Cakes

This makes those delicious individual cakes with the runny, chocolate center. Delicioso!!

Melt 1 ½ 12oz bags of milk chocolate chips

Meanwhile, mix:
8 eggs
1 ¼ C sugar
1 C flour
1 stick butter
Add the melted chocolate chips

Grease either individual ramekin’s or the jumbo sized muffin pans and pour mixture into each one. They can be prepared to this point up to two hours in advance of baking.

Preheat oven to 400 degrees. Bake for exactly 10 minutes – or just until the outsides harden. (Cooking too long will cause the inside to not be runny – it will be more like a brownie.) Let them cool/set for a minute or two before removing them. Top with your choice of ice cream, caramel, whipped cream, etc. Makes 12 lava cakes.
