eggs goldenrod

One of my favorites that we had today...

Toast and butter english muffins

Top with cooked Jimmy Dean sausage

Layer with white sauce:
Melt butter in a saucepan over high heat, and mix in an equal amount of flour. Add milk and stir continuously as it thickens until desired consistancy. I can never remember how much to start with--today I started with 1/2 cup butter and 1/2 cup flour, and we had some leftovers. Add in egg whites (see next step).

Hard boil some eggs (today we used 8). Separate the whites from the yokes. Chop up the whites and add to the white sauce. Mash up the yokes and sprinkle over the top of the layers.

Mmmm....yummy! Enjoy.
